Its not recommended to cut those mats as inside mesh is made from fiberglass and exposing it would weaken integrity of the whole product and it might be dangerous since glass particles might get into the food.
Can you use either side of these?
Yes. They are the same on both sides.
Can you place it directly in the oven or do you have to have a pan?
They aren't very sturdy unless placed on a pan. I'm not sure how well they would hold up without any support.
Are they BPA free?

If I spray oil does the mat get bad?
